Traditional French Onion Soup with Charcuterie Board

French onion soup is easier than it seems, the trick is to get the best broth you can.
Butcher shops often have real bone broth that works well.

Makes: 2 servings || Takes: 45 Minutes

2 large white onions

1 tbsp butter

2 cloves garlic (optional)

6 cups beef broth

1 cup of wine or sherry

6 ounces Jarlsberg or Swiss cheese

4 slices French bread

Charcuterie meats and cheeses

Thinly slice onions and melt butter in a large pot then brown over medium heat for 5 minutes. Add honey if using and simmer until deep golden brown for about 10 more minutes, stirring frequently to prevent burning. Add garlic if using and cook for an additional 2 minutes. Stir in beef broth and wine or sherry and bring to a boil. Reduce heat and let simmer for 30 minutes.

Ladle soup into individual oven-proof bowls and top with bread then top with cheese. Place in oven on broil for 1 to 3 minutes until cheese is hot and bubbly. Serve with a charcuterie board of sliced meats and cheeses.
