Ingredients
2 large white onions
1 tbsp butter
2 cloves garlic (optional)
6 cups beef broth
1 cup of wine or sherry
6 ounces Jarlsberg or Swiss cheese
4 slices French bread
Charcuterie meats and cheeses

Instructions
Thinly slice onions and melt butter in a large pot then brown over medium heat for 5 minutes. Add honey if using and simmer until deep golden brown for about 10 more minutes, stirring frequently to prevent burning. Add garlic if using and cook for an additional 2 minutes. Stir in beef broth and wine or sherry and bring to a boil. Reduce heat and let simmer for 30 minutes.
Ladle soup into individual oven-proof bowls and top with bread then top with cheese. Place in oven on broil for 1 to 3 minutes until cheese is hot and bubbly.
