As far as gourmet pizzas go, this Ricotta Pizza with Blackberry and Basil will have you reaching for your next slice before you’ve finished your first. The creaminess of the ricotta, the tart flavour of the blackberry and the signature punch of basil, combine together seamlessly, to make this refreshing twist on pizza one that you simply cannot say no to.
Makes: 8 servings || Takes: 20 Minutes
1 (14 to 16-inch) unbaked pizza crust
1 Tbsp olive oil
1 small pack of blackberries, halved
1 cup shredded mozzarella
1 cup shredded parmesan
1 cup ricotta
10 large basil leaves, sliced into strips
Preheat oven to 500 degrees.
Rub the olive oil over the pizza crust.
Smash half of the blackberries and spread out over the crust.
Top with mozzarella and parmesan cheese.
Scatter remaining blackberries over the pizza.
Randomly place spoonfuls of ricotta over the pizza.
Bake for 10-15 minutes, or until cheese starts to brown.
Scatter basil leaves over the pizza during the last few minutes of baking.
Remove from oven and slice into 8 large slices.
