Makes: 8 servings
Time: 20 Minutes
Serve with whipping cream, ice cream or Greek yogurt, adding a simple store-bought white cake if you prefer. An interesting brunch idea on pancakes and waffles too.
Ingredients
2cups strawberry, fresh or frozen, unsweetened, and sliced
4cups rhubarb, fresh or frozen, diced
1cup sugar
1⁄2cup water
Instructions
Mix all in a medium saucepan.
Cook on stovetop 10 to 15 minutes under medium heat (longer if rhubarb is tougher) until rhubarb is tender and sugar is dissolved. Stir occasionally to prevent sticking to pan. Bring to boil before cooling and storing.
