The flavours of the world come right to your kitchen with this simple meal made in mere minutes. Feta cheese, olives and oregano will always say “Greece!”
Makes: 4 servings || Takes: 15 Minutes
4 boneless skinless chicken breasts
1 fresh lemon, squeezed
1/4 cup white wine
1/4 cup extra-virgin olive oil
Salt and Pepper
1 tbsp dried oregano
1 whole English cucumber
1 whole tomato, diced
1/2 red onion, chopped
1 orange pepper
1/2 cup feta cheese
Store bought tzatziki (optional)
Mix together dressing/marinade: lemon juice, white wine, olive oil, salt & pepper to taste. Divide half into a separate bowl to use for marinade. Add chicken to the marinade. Coat a non-stick pan with oil at medium to high heat. Add the chicken and cook until no longer pink. Toss together tomatoes, cucumbers, orange pepper and red onions for the salad, crumble feta cheese and add Kalamata olives. Dress with remaining dressing/marinade.
Top with cooked chicken breasts and serve with a side of store bought tzatziki sauce.
