Saskatchewan Sour Cherry Pie

Makes: 4 servings 

Time: 60 Minutes

This homemade classic cherry pie is easy to make, and you can use either sweet or sour cherries.

Ingredients

1 ½ lb cherries & juice

¾ cup water

1 ½ cup sugar

4 Tbsp modified cornstarch

2 tsp lemon juice

1 unbaked pastry shell

Instructions

Thaw cherries. Drain juice from cherries.

Combine juice, water, sugar, and cornstarch. Mix until all lumps disappear.

Heat in a saucepan over medium heat. Stir frequently until it comes to a boil.

Add lemon juice. Boil one minute longer, stirring constantly.

Add cherries. Stir until it comes to a full boil. Cool.

Pour into unbaked pie shell.

Bake at 450º for 15 minutes. Reduce heat to 350ºF and bake 30 min.
