Apricot jam is the hidden MVP of this easy crostini appetizer.
Fresh parsley, chopped
2 tbsp. fresh cider vinegar
Spread apricot jam on crostini.
Top with Manchego cheese and sliced chorizo. Sprinkle with chopped fresh parsley.
