Oreo Cookie Pancakes

9 Crushed Oreos

1/3 cup all-purpose flour

1/4 cup cocoa powder

1/4 tsp salt, divided (1)

1/4 tsp baking powder

1/8 tsp baking soda

1 egg

4 Tbsp vegetable oil

1 tsp vanilla extract

1/4 cup granulated sugar

1/4 cup packed brown sugar

1/4 cup buttermilk


9 Oreo fillings

1/4 cup shortening

1/4 cup powdered sugar

1 cup marshmallow fluff

1 tsp vanilla extract

1/4 tsp salt, divided (2)[/vc_column_text][/vc_column_inner][/vc_row_inner][/vc_column][vc_column width=”1/2″][vc_column_text]



Separate the Oreo filling from the cookie. Place the cookie part in a seal-able bag and crush them (a rolling pin works best for this!). Set the Oreo fillings aside for the pancake filling.

Combine the flour, cocoa powder, half of the salt, baking powder and baking soda in a bowl and blend them together using a whisk.

In a separate bowl, combine the egg, vegetable oil, 1 tsp vanilla extract, granulated sugar and packed brown sugar.

Add about half of the wet ingredients and half of the buttermilk to the dry ingredients. Using a spatula, spoon, or electric hand-mixer, mix until the ingredients come together. Add the rest of the buttermilk and the rest of the wet ingredients and mix until completely combined.

Using a spatula, fold in the crushed Oreo pieces.

Using butter or cooking spray, grease a griddle and put over medium heat. Using a small ladle or 1/4 cup, pour the pancake mix onto the griddle.

Cook for 10-15 minutes, or until the edges appear dry.

Flip. Cook for another 2-3 minutes.


Combine the shortening, powdered sugar, Oreo cookie filling, marshmallow fluff, 1 tsp vanilla extract, and remaining half of the salt.


Stack the pancakes: beginning with pancake and alternating with filling for each layer.

For even more goodness, drizzle with chocolate sauce (or any choice of sauce), and garnish with any leftover crushed Oreo pieces.
