Here’s a fun one for kids to make mum for this upcoming Mother’s Day. Who doesn’t love chocolate chip pancakes? Only this way, your kids can tell mum they didn’t just make her ooey-gooey, delicious pancakes, they made her a very fancy, very elegant, Chocolate Chip Pancake Casserole. Mum’ll love it.
Makes: 6-8 servings || Takes: 5 Hours
Butter, for greasing baking dish
20 cooked pancakes (your favourite pancake recipe will do!)
5 large eggs
2 cups whole milk
1/4 cup sugar
1 tsp pure vanilla extract
1/2 cup chocolate chips
Powdered sugar, for dusting
Maple syrup, for serving
Butter a 9″ x 13″ baking dish. Cut cooked pancakes into halves and begin layering them in the dish.
In a large bowl, whisk together eggs, milk, sugar, and vanilla. Pour over pancakes, flattening them with a spatula to make sure they’re completely submerged in liquid.
Cover with aluminum foil and refrigerate (4 hours or overnight).
Preheat oven to 350°
Sprinkle with chocolate chips, cover with foil, and bake for 40 minutes.
Remove foil and continue baking for 10 minutes.
Dust with powdered sugar and serve with maple syrup.
