1 lb slab of salmon
Sweet with heath mustard
Preheat oven on broil.
Season the salmon with sweet with heat mustard, salt and pepper and place in oven for 22 minutes. WARNING – the fish will smoke and should get blackened on the top.
Dice mango, red onion, red/yellow pepper, cilantro and garlic and place in mixing bowl. Add olive oil, lemon, salt and pepper and a touch of hot sauce to dress the mango relish.
Pull salmon out of the oven, plate and add mango relish on top.
