Bourbon Balls

These delightful treats require no baking and combine ground vanilla wafers, toasted nuts with sugar and a kick of bourbon for a little added fun. We love this easy to make recipe from the editors of The Perfect Cookie by America’s Test Kitchen.

Makes: 24 servings || Takes: 1 Hour and 15 Minutes

6 tablespoons bourbon

3 tablespoons light corn syrup

1 ½ tablespoons unsweetened cocoa powder

½ cup (3 ½ ounces) granulated sugar

2 ½ cups (6 ounces) vanilla wafers

1 cup pecans, toasted

½ cup (2 ounces) confectioners’ sugar

Process vanilla wafers and pecans in food processor until finely ground (15 seconds) then transfer to large bowl. Stir in confectioners’ sugar, bourbon, corn syrup, and cocoa.

Spread granulated sugar in shallow dish. Working with 1 heaping tablespoon at a time, roll wafer mixture into balls, then roll in granulated sugar to coat. Transfer balls to large plate and refrigerate until firm (this should be for at least an hour), before serving.
