Try this colourful cocktail which has the sweet flavours of pineapple and raspberry as well as the added decadence of sparkling white wine.
Makes: 6-8 servings || Takes: 15 Minutes
1 cup chilled seltzer
1 teaspoon pure vanilla extract
1 bottle (750 millilitres) chilled brut sparkling white wine
2 cups raspberries, plus more for serving
2 cups pineapple juice
To make the cocktail blend together raspberries, pineapple juice, and vanilla until smooth. The fruit should be strained through a fine-mesh sieve, pressing on solids; pour into a pitcher. Top with wine. Allow the foam to settle; top with seltzer and stir gently to combine. Put a few raspberries in each glass, pour, and serve.
